This salad can be prepared in advance, you can put everything in a lunchbox and add the dressing right before eating.
250g Salad potatoes
80g Green beans
40g Lamb’s lettuce
110g Canned tuna in olive oil
2 Hard boiled eggs
3 tbsp Olive oil
1 Garlic clove
2 tbsp White balsamic vinegar or wine vinegar
Salt, Freshly ground pepper
Cook the potatoes and beans, rinse with cold water and let them cool down. Cut the potato into thick slices and cut long beans in half. Cut the egg into wedges, and the olives in half.
Drain the tuna and loosen up with a fork, if the oil is high quality it can be used for the dressing as well.
Place all the ingredients into shallow bowls or in a lunchbox, the lettuce and egg slices on top. Mix the dressing well and drizzle on top right before serving.
