Rocket Salad with Potatoes and Feta
This is the perfect recipe for using up a large amount of rocket. It is suitable as side dish to fish or with bread as a light summer dinner. With a smaller amount of rocket and feta and more potatoes you can turn it into a mediterranean potato salad. With the following proportions, rocket is the main ingredient.
350g Salad potatoes
4 large Lettuce leaves
1 Red onion
1/2 tbsp Capers
3 tbsp White balsamic vinegar
5 tbsp Olive oil
Salt, freshly ground black pepper
Peel the potatoes, cut larger ones in half lengthwise and boil them in salted water until soft. Let them cool down and cut into thick slices. Mince the onion and capers and cut the feta into cubes. Wash the lettuce leaves and tear into small bite size pieces. Combine all ingredients in a large bowl and season to taste. Serve immediately.
