Sauteed Mustard Greens

For a vegetarian version substitute the bacon with smoked firm tofu or just leave it out.

I did not find the perfect recipe for mustard greens on the internet so I combined some of the ideas from these recipes into the following dish. The result was much better than I expected and I am looking forward to eating this again. If you add tofu and eat this with rice it will be a complete meal.

Serves 1
60g mustard greens (substitute chard or spinach)
2 slices of lightly smoked bacon
1 large garlic clove
1 Tbsp onions, chopped
1 Tbsp balsamic vinegar
50ml water or broth
olive oil
salt
(optional) ground chili or cayenne pepper

In a pan on medium heat saute the onion and sliced bacon until the onion is translucent the bacon starts to get crispy. Add the minced garlic and stir-fry for another minute. Add the sliced greens and fry until wilted. Add the liquid and cover. After 2-3 minutes the vegetables should be tender. Let all liquid evaporate and add the balsamic vinegar. Let the liquid reduce and add salt to taste. If you like add ground chili or cayenne pepper.
