Raisin zucchini couscous salad

This is a very nice and refreshing sweet and sour salad which is a perfect accompaniment for grilled or oven baked dishes. When cooking the couscous, add the raisins to the cooking water already. Grate the zucchini coarsely and fry it in olive oil before adding to the salad.

Serves 2 as side dish:
150g zuccini
60g couscous
25g raisins
125ml lightly salted water for cooking the couscous
3 tbsp olive oil
1.5 tbsp white balsamic vinegar
mint
basil
salt, pepper
